Lunch Ideas
One of my recent goals is to be more diligent about making and sticking to a meal plan, in hopes of cutting down on my grocery bill. I never have a problem coming up with things to make for dinner, but lunch is a struggle for me. I'm not a huge sandwich fan, so I try to limit them to once or twice a week. I love to eat salads for lunch, but I need something else with it to make it a meal. What ideas do you girls have for yummy lunches?

I like making quesadillas a lot (cheese and black beans...mmm mmm good). Also, I like quick and easy spaghetti (noodles with cheese and prego). :) (my daughter really likes both of those meals, too)
Other than that...I guess I'm mostly a sandwich girl. We eat edamame for lunch a lot...so that is fun...but not a main dish so much. Also, I have leftovers for lunch a lot. I purposely try to make a lot for dinner so that my hubby and I are set for leftovers for lunch the next day. :) It's the best!
I struggle with this too! I eat a lot of leftovers for lunch or make a sandwich usually. I also try to have a few easy things in the freezer like taquitos (doesn't save on the grocery bill but does save on the eating out bill) My Mom is better at this and will make more hearty salads like pasta salads filled with veggies, chefs salads with lots of meat and cheese to fill in. stuff like that.
Another idea is soup - soup even from a can (like progresso or the chunky campbells) can be fairly filling especially along with something else, like a piece of fruit and some veggies. Or add some triscuit crackers - those are fairly filling too.
Leftovers are a great idea for lunch.
I struggle a lot with lunch too! I also usually have leftovers because I don't really like to take a lot of time to prepare something for lunch. One of my favorite things to have when I'm in the mood for something light is a fruit and yogurt parfait. I just use grapes and strawberries in vanilla yogurt and add some granola to it. Mmmm...
I love salad. I like to rinse and chop everything and then store it in tupperware to use throughout the week. Next time you're making chicken, you could try setting aside an extra piece of chicken to put strips in your salad. I think you can buy chicken like that too for exactly that purpose. Adding nuts would give you protein that will stick with you. I usually just keep it vegetarian and then have some string cheese, yogurt, peanut butter on a banana, or something to keep me from being hungry after lunch.
