Claire - I second your favorite restaurant salsa being Rosa's! In fact, I'm headed to AZ today for a wedding and am so so excited to sneak in a trip to Rosa's! They really need to make that place more of a chain.
I remember making homemade salsa in YW and wish I remembered the recipe because we grew a ton of tomatoes this year, most of which got dumped.
Homemade Salsa: Tomatoes,(roma tomatoes are a good choice) jalapeno peppers, onions, cilantro, a little bit of lemon juice, salt to taste. For a different taste you can add a little garlic powder. (Cilantro is optional)I love those choppers. You put everything in there and it chops it for you.I got mine for $14.00 at Walmart. I love it! Chop the tomatoes first and then put them in a separate bowl. Then chop the onions and peppers. I notice that if you chop the peppers and tomatoes at the same time there is some kind of reaction and the tomatoes foam up. STRANGE! I discovered this myself. Another easy salsa recipe... Pineapple salsa! Its a favourite at our house.
I use a food processor to chop up either canned pineapple (drained of its juice) or fresh pineapple chunks. Put that in a bowl.
Then use the food processor to chop up a seeded jalapeno. (Try not to get the jalapeno on your bare skin!) I add the jalapeno to the pineapple along with some salt, a little minced garlic and lime juice. You can also add chopped green onions or cilantro for added flavour. And remember that salsa flavours intensify over night.

A restaurant out here called Rosa's has the best tomatillo salsa.
Here is my cheater salsa recipe... so easy and beyond yummy! Everytime I make it I get a dozen requests for the recipe.
* 1 jar Pace mild salsa
* 1-2 avocados, diced
* 1 can black beans
* 1 can shoepeg corn
* garlic salt to taste (use lots! it tastes better that way)
Mix ingredients together and serve with chips. :D Told you that was easy.
Medium and juicy, not chunky!
