A pastry shop! I'm all about candies and desserts.
I'd say a bakery, but I was just thinking this morning that for as much as I love to eat doughnuts, I have no idea how to make them. I think I just started a to do list! Also, although I make bread occasionally, it's definitely not my favorite thing to do. I'm a sugar queen! :)
I'd like to have a restaurant that catered to people with food allergies! Since my son has some food allergies it's really hard to get him something to eat if we go out (if he can have anything at all). I'd have a special menu with different sections like dairy-free, egg-free, peanut-free, or all of the above. The only bad thing is that it would be really hard to keep all the utensils seperate in the kitchen to avoid cross-contamination!

a mix! I would have one of those restaurants where you can get yummy hamburgers, pasta, steak, seafood, and then fun exotic specials!
Mexican, but I would try and do a healthy spin on it.

I second liz&meg... I like too many things to do just one. Definitely soups, salads, home cookin', mexican, etc.
Health food that you can get take out. People like health food these days and are willing to pay up for take out. I am about making money.
A bakery - I love to bake breads and cookies and pies and stuff. I'd probably serve soup too.
