Meal Planning Burnout


I do this several times a year. Near the end of the warm seasons, I get sick of the same things I'm cooking over and over and run out of meal ideas that don't use the oven and heat up the house. In the winter, I get sick of baking, casseroles, and soup. Do you have any fresh ideas to get me through the rest of summer? Favorites? Anything????

i know that this is just simple...but my husband and i love quesadillas. we usually do cheese and black beans...but sometimes we add chicken. we always have corn with them too...and salad and fruit to make it a more filling meal. but its quick and easy and doesn't heat up the house on a hot summer day. :)

our friends had us over for dinner the other day and they made chicken salad and served it with pitas and your choice of many different toppings (like lettuce, spinach, sprouts, etc.). that was a really fun summer dish too.

also, my husband stumbled across this recipe for salmon where you cook it in the microwave (it sounds weird...but it steams it and it ends up SOOOO good. some of the best salmon we've ever had). you just put some olive oil on it, parmesian cheese, and then the spices of your choice (we do Montreal's chicken seasoning, garlic salt, ground black pepper, basil...I don't know...whatever sounds good), and then cover it and microwave it for about 7 min (that's for two filets). It's WAY good and super fast to make. And then we just have veggies and brown rice to go with it.

anyway...I don't know if those help or not...but they're three meals we like to have a lot. :)

oh yeah...and spaghetti...but that's just a staple for us.

I wish I had some good ideas, my suggestion was having a potluck with friends.

I have kind of a basic meal that I do pretty often with different variations. In it's most basic form it would be marinated chicken that I bake, couscous, and some type of veggie...my fave is just zucchini and sqaush slices with EVOO that I put on a baking sheet or grill pan and sprinkle with parmesan cheese.

I like to marinate with BBQ sauce or a Lawry's marinade. I've tried grocery store brands and they are great too. I like Lemon Pepper, Sesame Ginger, and Caribbean Jerk.

Sometimes instead of couscous I do rice or potatoes.

The other day I was thinking it would be fun to make kabobs...I've never done it but it sounds yummy.

Chantel--you should post your recipe for Crock Pot ribs.

Girl, I'm with you. My meals are getting a little boring and the entire house heats up to a million degrees when I turn on the oven.

Speaking of kabobs...I have made kabobs a lot this summer as they are one of my husband's favorites. I just cut up all sorts of vegetables - any color peppers, red onion, zucchini, mushrooms, cherry tomatoes, etc - and melt some butter with parmesan cheese and garlic powder. I pour the butter mixture over the veggies and toss them. Not exactly healthy, but so good. The meat I just cut into chunks and marinate for a couple of hours in whatever I have. Lots of times I just marinate chicken in Italian dressing. Make sure to soak the kabob skewers in water for an hour or so...I forgot last time and they all caught on fire. Just put whatever you want on your skewers and grill. I've also started cutting up pineapple chunks, tossing them in brown sugar (the brown sugar and pineapple juice make a glaze), putting them on skewers and grilling them. They are really good.

We do the same with our kabobs but we skip the marinades on the fruits and veggies. They're great on their own too!
