I have found that most of the people I make meals for prefer to have frozen ones that they can make at their convenience. I love to cook, but have not mastered the art of frozen meals other than enchiladas and chili. Does anyone have any recipes that work great as frozen meals?

most pasta dishes (lasagna, ziti, etc.) work well frozen. rice, in general, does not freeze well and neither do beans-they turn to mush!
This is a good question, Katie! I've never done any frozen meals at all so I'm definitely interested in what everyone else has to say. Do you prepare the meal and then just freeze it, or do you bake it, then freeze and reheat it?
I don't freeze meals very often, but it seems like people freeze casseroles and soups a lot.
My mom, who is an empty-nester, introduced me to a book called Dinner is Ready by Deanna Buxton. It is a book that explains how to prepare meals ahead of time and can be frozen. When my mom came out for the birth of my son, she and my grandmother prepared 20 of these meals and had them in the freezer for when she left. They were great, and such a blessing. I think the book has over 150 recipes and explains how to prepare each for freezing.
