Chocolate Caramel Surprise Cookies


1 cup sugar
1 cup brown sugar
1 cup butter or margarine
2 tsp. vanilla
2 eggs
48 rolo candies, unwrapped :)
2 1/2 cups flour
3/4 cup unsweetened cocoa
1 tsp. baking soda
1/2 tsp. salt
1 cup chopped nuts (i prefer pecans), divided into 1/2 cups
1/2 cup sugar

Beat together sugars and butter until fluffy. Mix in vanilla and eggs and beat well. In a separate bowl, mix dry ingredients: flour, cocoa, baking soda, and salt. Mix in with wet mixture. Stir in 1/2 cup chopped nuts. Cover and chill. While cooling, unwrap Rolo candies. Mix 1/2 cup chopped pecans and 1/2 cup sugar. Roll a spoonful of dough around each candy. Press balls of dough on one side into pecan mixture. Bake sugar side up at 375 for 7-10 minutes until cookies crack on top. *I also like to melt some white chocolate chips and drizzle them with a pastry bag on top. It adds color, flavor and keeps the nuts and sugar in place!
