veggie tales


I am always looking for more delicious ways to incorporate vegetables at dinner. What do you do? I do green salads, sometimes just steam fresh vegetables, recently tried roasting potatoes with zucchini, squash, EVOO, and S&P, and I like those frozen bags that steam in the microwave. What ideas do you have? I don't know much about roasting (only tried it once). Any insights in the roasting arena too?

I'll just tell you about a couple of our fav. veggies. We take asparagus and cut the bottom ends off, coat them with a little olive oil, spread them flat on a cookie sheet, sprinkle some coarse sea salt on them, cook them at 400 degrees for 15-20 (until a little crispy), then when you pull them out of the oven sprinkle some shredded parmesan cheese on top. This is also yummy done with zucchini cut into wedges. We also like zucchini sauteed in a little olive oil in a fry pan and seasoned to taste. Garlic green beans are another fav. Steam them first, then throw a little olive oil in a pan put a little salt in with them and let them cook for a few minutes to get a little brown, Then when they're cooked almost to how you like them throw in some chopped fresh garlic and cook for just a couple more minutes.
